Course Appetizer

Ingredients
  

  • 1 (32 oz.) bag frozen hash brown potatoes,thawed
  • 2 c cheddar cheese, grated
  • 1 c onion, chopped fine or grated
  • 1 (12 oz) container sour cream
  • 1 (10.5 oz) can cream of chicken soup
  • ½ c margarine or butter, melted
  • 2 tsp salt

Instructions
 

  • Mix potatoes, cheese, onion, sour cream, soup,margarine or butter, and salt together andspread in a 9×13 inch casserole.
  • Bake at 350 degrees for 45-60 minutes or untilslightly brown on top.

Notes

Variations:
This is good with different kinds of cheese, a few tablespoons of green onion or sweet bell pepper, a small can of green chilis, or the addition of a protein, such as ham or bacon.
Story:
It was always a treat when my grandmother Hilda made this very rich and mouth-  watering casserole. It is not low-calorie, however, it definitely adds a savory and satisfying side dish to any special meal.
