Course Appetizer

Ingredients
  

  • 1 tbsp olive oil
  • 2 tbsp salted butter
  • 3 shallots, sliced
  • 3 cups mushrooms, diced (I used baby bellas)
  • 1/2 cup cooking sherry
  • 2 tbsp flour
  • 3 cups whole milk
  • 2 tbsp Kikkoman soy sauce
  • 8 cups fresh green beans
  • 2 cups French fried onions, divided
  • Salt and Pepper to taste

Instructions
 

  • Heat oil and butter in a non-stick pan overmedium heat. Add shallots and slowly cookthem until caramelized, about 8-10 minutes.
  • Deglaze pan with cooking sherry and addmushrooms. Cook until mushrooms are soft,about 5 minutes.
  • Once the mushrooms are cooked down, stir inflour and cook for another minute.
  • Slowly add the milk a 1/2 cup a time, allowingthe sauce to thicken before adding moremilk. This process takes time and you have toconstantly stir/nurture the sauce so it doesn’tclump up. This step takes about 30 minutes
  • Once the sauce is done, take it off the heat andadd soy sauce. Then add salt and pepper totaste.
  • Stir in green beans and 1 cup French Friedonions. Pour into casserole dish. Top withreaming onions. Cover and bake at 350degrees for 20 minutes. You can prepare thisdish ahead of time and keep it in the fridge. Ifyou do this, you will have to bump up your baketime to 35-40 minutes.
