Ingredients
  

  • Water (to the 3-cup rice marking in cooking pot)
  • 2 cooker cups jasmine rice
  • 1 3cm piece fresh ginger, halved
  • 1 garlic clove, thinly sliced
  • 1 tbsp finely chopped lemongrass
  • 6 fresh Thai basil leaves
  • ¼ tsp flaked salt
  • 3 spring onion, thinly sliced
  • ¼ cup fresh coriander leaves

Instructions
 

  • Put the rice, water, ginger, garlic, lemon peeland basil in the cooking pot of the rice cooker.Select the White Rice function and press Start/Stop.
  • Once the audible tone has sounded toindicate the end of cooking, open the lid andadd the remaining ingredients; toss to tasteand combine
  • Taste and adjust seasoning as desired andserve immediately.

Notes

TIP: This rice freezes well. Portion out into 1-cup servings.
