Ingredients
  

  • 400 g can coconut milk
  • 2 tbsp brown sugar
  • 3 tbsp light soy sauce
  • 2 tbsp curry powder
  • 12 (about 600g) chicken tenderloins,fat trimmed
  • 200 g jar crunchy peanut butter
  • 1 tbsp fresh lime juice
  • 8 bamboo skewersFresh coriander leaves to serve

Instructions
 

  • In a bowl combine the coconut milk, brownsugar, soy and curry powder add chicken andmarinate for a minimum 1hour. Remove chickenpieces from the marinade, reserving themarinade. Thread chicken onto bambooskewers. Transfer the reserved marinade into asaucepan and add peanut butter. Stir well andbring to a gentle simmer over medium heat.Cook, stirring often, for 5 minutes or until thesauce thickens. Stir in lime juice.
  • Turn on the Grill and set to 200°C.
  • Once preheated cook the chicken skewers for2-3 minutes each side or until cooked through.
  • Serve skewers drizzled with the satay sauce andtop with fresh coriander leaves.
