Ingredients
  

  • 3 tbsp olive oil
  • tbsp fresh ginger, peeled & finelychopped
  • 3 garlic cloves, finely chopped
  • ¾ tsp salt flakes, divided
  • ¼ tsp freshly ground blackpepper, divided
  • ½ medium onion, chopped
  • 1 large white potato, peeled & cutinto 1.5cm cubes
  • tsps ground cumin
  • tsp ground coriander
  • 1 tsp ground cinnamon
  • ¼ tsp ground turmeric
  • 4 cooker cups basmati rice
  • 1 cup frozen peas
  • ¹⁄³ cup chopped fresh coriander
  • Water (to the 2- cup marking inthe cooking pot)

Instructions
 

  • Put the oil in the cooking pot of the ricecooker. Select the Sauté function and pressStart/Stop. Once oil is hot and shimmering,about 2 minutes, add the ginger and garlicwith a pinch each of the salt and pepper.Sauté until fragrant, about 1 minute. Add theonion; sauté about 1 to 2 minutes. Add thepotato and the remaining salt and pepper andall of the spices. Stir well so that thevegetables are well coated, cooking until thepotato is just tender, about 5 minutes. PressStart/Stop to stop the Sauté function.
  • Add the rice and water. Close the lid of thecooker and select Quick White Rice and pressStart/Stop.
  • When there is about 5 minutes remaining inthe cooking time, stir in the peas andcoriander. Close lid again and let the ricefinish cooking.
  • Once the audible tone has sounded, open thelid and stir to mix. Taste and adjust seasoningas desired and serve.
