Course Appetizer

Ingredients
  

  • 2 cooker cups freekah
  • 3 cups water
  • ½ tsp flaked salt
  • ½ medium red onion, finely chopped
  • 1¹⁄³ cups corn kernels, fresh or frozen(thawed)
  • 1 cup grated zucchini
  • 1 cup chopped capsicum
  • ½ cup chopped spring onion
  • ½ cup chopped semi dried tomatoes
  • ½ cup Vinaigrette dressing of yourchoice
  • 1/3 cup roughly chopped flat leaf parsley

Instructions
 

  • Put the freekah, water and salt in the cookingpot of the rice cooker. Select the Chewy Grainsfunction and press Start/Stop.
  • Once the audible tone has sounded toindicate the end of cooking, turn the unit offand open the lid. Spread the freekah out on abaking sheet to cool.
  • When the grains are cooled, place in amedium bowl and add remaining ingredients.Toss gently to combine. Add the dressing andthe parsley; toss again to combine.
  • Adjust seasoning and serve.
