Ingredients
  

  • 1 tsps ghee or butter
  • 1 small onion, finely chopped
  • 1 small jalapeño, seeded and finelychopped
  • 1.5 cm piece ginger, peeled and finelychopped
  • 1 garlic clove, finely chopped
  • 1 tsps curry powder
  • ¼ tsp sea salt flakes
  • 4 cups butternut squash, cut into 3cmcubes
  • 1 can 400g coconut milk
  • 2 cups chicken broth

Instructions
 

  • Put the ghee or butter into a large saucepanover medium/medium-low heat. Once theghee/butter is hot, add the onion, jalapeño,ginger and garlic with the curry powder andsalt. Heat until soft and fragrant, about 5minutes.
  • Stir in the butternut squash to coat evenlywith the spices.
  • Add the coconut milk and broth. Increasethe heat so the liquid comes to a boil. Onceboiling, reduce heat to maintain a steadysimmer. When squash is soft, approximately20 minutes, use hand blender to blend soupuntil completely smooth.
  • Taste and adjust seasoning accordingly.
