Ingredients
  

  • 1 tsps extra virgin olive oil
  • 2 medium leeks, white and lightgreen parts, sliced
  • 4 medium courgette, cut into largedice
  • 1 tsp sea salt flakes, divided
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • ½ cup fresh mint leaves
  • ¼ cup heavy cream (optional)

Instructions
 

  • Put the olive oil into a large saucepan overmedium heat. Once the oil is hot, add theleeks. Stir over medium heat untilvegetables soften, about 8 to 10 minutes.
  • Once soft, add the courgette with the salt,stir ingredients together until well coated.Add the stock and ½ of the herbs. Turn theheat up to bring mixture to a boil. Whenthe soup comes to a boil, reduce the heatin order to maintain a simmer. Simmer untilthe courgette is tender.
  • Once tender, add the remaining freshherbs. Blend until smooth. To help facilitateblending, tilt pot to one side, so theblender blade guard is completelysubmerged.
  • Taste and adjust seasoning, add remainingsalt to taste if necessary
