Ingredients
  

  • 300 g lean minced beef
  • 1 medium brown onion, finelychopped
  • 1 garlic clove, crushed
  • 1 long green chillies, seeded, finelychopped
  • ½ tbsp chilli flakes, or to taste (optional)
  • 1 tbsp ground cumin
  • 2 tbsp tomato paste
  • 400 g can diced tomatoes
  • 400 g can red kidney beans, drained,rinsed
  • 125 ml low salt beef stock
  • Coriander leaves to serve
  • Cooked rice to serve
  • Sour cream (optional)

Instructions
 

  • Turn on the grill and set to 180°C.
  • Cook mince and stir to break up lumps, untilbrowned. Remove mince from pan leaving thepan juices in pan.
  • Add onion, garlic, chilli and spices to pan and until the onion is soft about 4 minutes.
  • Reduce heat to 120°C. Return mince to pan; stirin tomato paste, tomatoes, kidney beans andstock. Season to taste with salt and freshlyground black pepper. Simmer, with top down,for 30 minutes. Stir occasionally.
  • Serve with rice and sour cream and top withcoriander.
