- ¼ cup wine vinegar (any variety willwork)
- 1 tsp Dijon mustard
- ¼ tsp sea salt flakes
- ¹/8 tsp freshly ground black pepper
- ¾ cup extra virgin olive oil
- Put all ingredients, in the order listed, intothe mixing beaker.
- Blend, keeping the blade guard completelysubmerged, until the mixture starts toemulsify. Continue, using a gentle up-anddown motion, until homogenous, about 30seconds
- Taste and adjust seasoning as desired.
