Ingredients
  

  • cups Perfect Sushi Rice (precedingrecipe)
  • ¼ avocado, peeled, pitted & thinlysliced
  • 3 Lebanese cucumber, thinly sliced
  • 1 spring onion, thinly sliced
  • 4 fresh basil leaves
  • Bowl of cold water (to helprolling sushi)
  • Pickled ginge
  • Wasabi
  • Soy sauce

Instructions
 

  • Cover the sushi mat with plastic wrap (toprevent Continue rolling the mat forward tomake a complete roll. With one hand on top,gently roll mat back and forth a few times tomake a nice round shape sticking). Wet handswith cold water and press sushi rice ontocovered mat. Place the avocado, shallot andbasil leaves in a thin horizontal line across themiddle of the rice. Wet hands again with waterand, with the help of the sushi mat. Gently liftthe end of the mat closest to you, and roll itover the ingredients to enclose.
  • Continue rolling the mat forward to make acomplete roll. With one hand on top, gentlyroll mat back and forth a few times to make anice round shape.
  • Unwrap the sushi mat then, with a clean sharpknife, cut into about 8 x 2cm pieces. Servewith pickled ginger, wasabi and soy sauce.
