  • 1 9-inch round baking dish, greased

Ingredients
  

  • 2 slices bacon, chopped
  • 1 tablespoon olive oil
  • ½ onion, thinly sliced
  • 1 large gold potato, diced into½-inch cubes
  • Salt & pepper, to taste
  • 6 large eggs
  • ½ cup grated Parmesan cheese

Instructions
 

  • Place the chopped bacon slices in a large nonstick skillet.Cook over medium high heat for 5 minutes or until thebacon is cooked and crispy. Move the bacon to a smallplate.
  • Add olive oil to the skillet, then add the onion and potato.Season with salt and pepper. Sautee for 10-12 minutes, oruntil the potatoes are tender.
  • Remove from heat and place the bacon, potatoes, andonions into the greased baking dish.
  • Select the Preheat function on the Cosori Smart Air FryerToaster Oven, adjust temperature to 350°F, and pressStart/Pause.
  • Whisk together the eggs, Parmesan, and a pinch of saltand pepper in a bowl. Pour egg mixture over the bacon,potatoes, and onions.
  • Place the baking dish on the wire rack, then insert therack at mid position in the preheated oven.
  • Select the Bake function, adjust time to 15 minutes, thenpress Start/Pause.
  • Remove when the frittata is set. Allow to cool for 10minutes before slicing.
