  • 1 Mortar and pestle, or spice grinder


Pistachio Dukkah Ingredients

  • 3 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 cup shelled pistachios
  • ¼ cup sesame seeds
  • 1 tablespoon salt
  • ½ tablespoon pepper

Asparagus Ingredients

  • 1 bundle asparagus spears
  • 1 tablespoon olive oil
  • Salt & pepper, to taste


  • Make the pistachio dukkah by placing the corianderand cumin seeds in a skillet over medium heat. Toastfor 2 minutes, or until fragrant. Transfer spices to aspice grinder or mortar and pestle. Allow spices to coolcompletely, then grind.
  • Toast the pistachios in a skillet for 5 minutes, or untilgolden brown and fragrant. Transfer to a cutting boardand chop finely. Add the sesame seeds to the sameskillet and toast for 2 minutes, or until golden brown andfragrant. Transfer the pistachios, sesame seeds, coriander,and cumin seeds to a bowl. Add salt and pepper, then stirto combine.
  • Select the Preheat function on the Cosori Smart Air FryerToaster Oven, adjust temperature to 430°F, and pressStart/Pause
  • Line the food tray with foil, then place the asparagus onthe tray. Drizzle with olive oil and season with salt andpepper.
  • Insert food tray at top position in the preheated oven.
  • Select the Air Fry function, adjust time to 8 minutes, andpress Start/Pause.
  • Remove when asparagus is tender. Place asparagus on aserving dish and sprinkle with pistachio dukkah.
  • Pistachio dukkah can be stored at room temperature in asealed jar or container for up to 4 weeks.
