Tomato Basil Soup

Growing up, my aunt and I would make this recipe every yeararound Christmas using the tomatoes she grew at the ranch. Aftermaking many batches, we can the soup and give it to family andfriends. This soup is perfect on a cold day!

Ingredients
  

  • 3 lbs. plum tomatoes
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1 1/2 teaspoons black pepper
  • 2 cups chopped yellow onions
  • 6 garlic cloves minced
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon crushed red pepper flakes
  • 28 xounce canned plum tomatoes
  • 4 cups basil
  • 1 teaspoon thyme leaves
  • 1 quart vegetable stock or water

Instructions
 

  • Preheat oven to 400 degrees.
  • Toss together the tomatoes (cut lengthwise), 1/4 cup olive oil,salt and pepper and place on a baking sheet to roast for 45minutes.
  • In a pot over medium heat, sauté the onions and garlic with 2tablespoons of olive oil, butter and red pepper flakes for 10minutes.
  • Add the canned tomatoes, basil, thyme and vegetable stock.
  • Add the oven roasted tomatoes, including the liquid on thebaking sheet.
  • Bring to boil and simmer uncovered for 40 minutes.
  • Blend all together (an immersion blender works great).
  • Serve hot or cold.
