Biryani is the most sought after dish in my family because of itsvibrant flavors and aroma. I always think of us running to the kitchenfor seconds and thirds every time my mom would make this dish. It’sa popular Indian recipe that requires a specific layering method.What I love about it is that I can be creative with the vegetablesand spices that I want to add, such as cashews or bayleaf. I makebiryani to feel at home while studying at RVU. It gives me a sense ofnostalgia and feeds my soul.

Ingredients
  

  • 1 cup plain yogurt
  • 1/2 cup oliveoil
  • 2 tsp cumin seeds
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tbs Curry masala formeat (MDH brand)
  • 1 tbs Tandoori masala (MDH)
  • 1 tbs Kasoorimethi (MDH)
  • Chop 4-5 garlic cloves
  • 1 inch ginger
  • 5-6 small serrano peppers

Instructions
 

  • Cut a bowl of chicken.
  • While meat is marinating: Soak 1 cup of rice in a bowl. Cut 1-2onions into long pieces and sauté the onion mixture in a frying panwith lots of oil until brown.
  • Instapot: First layer the pot with the marinated chicken, Then adda layer of rice (uncooked), Top it off with onions, Repeat. Add 1 cupof water. Set instapot to high-pressure cook for 12 minutes. Once it isdone slowly wait for steam to release.
