Ingredients
  

  • ½ onion, sliced
  • ½ cup cider vinegar
  • ¼ cup sugar
  • 1  tbsp pickling spice
  • 3  tbsp sea salt
  • 6  small beets, cooked, peeled & sliced

Instructions
 

  • Place the Inner Pot in the Power Quick Pot.
  • Press the Sauté Button, scroll to the Vegetablessetting, and press the Program Dial. Pressthe Program Dial again to confirm thedefault setting and begin the cooking cycle(370° F/170° C for 10 mins.).
  • Add the onion, vinegar, sugar, pickling spice,and salt to the Inner Pot and bring the mixtureto a boil.
  • Press the Cancel Button. Use the Kitchen Tongsto place the beets in half-pint jars and thenladle the mixture from the Inner Pot into the jarsuntil only 1 in. of space is left at the top of thejars. Clean the rims of the jars with white vinegarand seal the jars.
  • Clean out the Inner Pot, return the Inner Potto the Power Quick Pot, and place a steamingrack inside the Inner Pot. Place the jars on thesteaming rack. Pour water into the Inner Pot until the water reaches one fourth of the way upthe jars.
  • Place the Lid on the Power Quick Pot and turnthe Lid counterclockwise. The Lid will lock andthe Pressure Release Valve will close.
  • Press the Canning Button and then the ProgramDial to confirm the Custom setting. Press theTimer Button, scroll to set the cooking time to15 mins., and press the Program Dial to beginthe cooking cycle.
  • When the timer reaches 0, the Power Quick Potwill automatically switch to Keep Warm. Pressthe Cancel Button. Let the Power Quick Pot sit tonaturally release pressure. Then, slide the SteamRelease Switch to the Open position. When thesteam is released, remove the Lid.
  • Use the Jar Lifter to carefully remove the jarsfrom the Inner Pot.

Notes

At the end of the cooking cycle, the pressure must be released before you can open the Power Quick Pot. Before opening the Unit, go to the Releasing Pressure section in the Owner’s Manual of the Power Quick Pot
and read the instructions for releasing the pressure.
