Ingredients
  

INGREDIENTS FOR LOAF

  • 1 1/2 cups plain flour
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 medium very ripe bananas, mashed
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup unsweetened applesauce
  • 1/3 cup Almond Breeze Unsweetened
  • 1 cup grated carrots
  • 2 tbsp melted coconut oil
  • 1/2 cup chopped walnuts (some for sprinkling ontop as well)

INGREDIENTS FOR ICING

  • 2 cups raw cashews soaked overnight
  • 1/3 cup pure maple syrup
  • 2 tbsp fresh lemon juice to taste
  • 1/4 cup Almond Breeze Unsweetened
  • 1 tsp pure vanilla extract

Instructions
 

  • Preheat oven to 180 degrees.
  • Spray loaf pan with non-stick cooking spray.
  • In a large bowl, mix flour, oats,baking powder and cinnamon.
  • In a medium bowl, mix together mashedbanana, coconut sugar, egg, vanilla, applesauce and Almond Breeze until well combinedthen, fold in carrots.
  • Add melted coconut oil and chopped walnutsto mixture.
  • Pour mixture into prepared loaf pan and bakefor 45 minutes.
